Instructions

  1. Peel and slice 2 medium sweet potatoes into uniform 1/4-inch thick fries.
  2. Place the cut fries in a large bowl of cold water and soak for 30 minutes (15 minutes if in a hurry).
  3. Drain and pat the fries completely dry with a clean kitchen towel or paper towels.
  4. In a dry bowl, combine olive oil, cornstarch, sea salt, smoked paprika, garlic powder, and black pepper. Add the dried fries and toss until evenly coated.
  5. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  6. Arrange the fries in a single layer in the air fryer basket, avoiding overcrowding.
  7. Cook for 15-18 minutes, shaking or flipping halfway through for even crispiness.
  8. Remove fries when golden brown and crispy on the edges with tender centers.
  9. Let fries cool for 1-2 minutes before serving.
