  • 2 tablespoons ranch seasoning mix
  • 1 cup plain or seasoned breadcrumbs (panko or regular; gluten-free if needed)
  • 1/4 cup finely grated Parmesan cheese (optional)
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour (or almond flour for low-carb)
  • Salt and black pepper, to taste
  • Cooking spray or olive oil spray
  • Optional: 1/2 teaspoon cayenne pepper or smoked paprika
  • Optional: Chopped fresh parsley or chives for garnish

Instructions

  1. Cut chicken into 1-inch pieces and pat dry with paper towels.
  2. In a shallow bowl, combine flour, 1/2 teaspoon salt, and a pinch of black pepper. Add cayenne or smoked paprika if desired.
  3. In a second bowl, beat the eggs until smooth.
  4. In a third bowl, mix breadcrumbs, ranch seasoning, and Parmesan cheese until well combined.
  5. Working in batches, dredge each chicken piece in the seasoned flour, then dip in egg, then coat in the ranch breadcrumb mixture. Press gently to adhere.
  6. Place coated chicken pieces on a plate or baking sheet.
  7. Preheat air fryer to 400°F.
  8. Arrange chicken bites in a single layer in the air fryer basket, leaving space between pieces. Lightly spray with cooking spray.
  9. Air fry at 400°F for 8-10 minutes, shaking or flipping halfway through, until golden and cooked through (internal temp 165°F).
  10. Let rest for 2-3 minutes before serving. Garnish with parsley or chives if desired.

Notes

For gluten-free, use GF breadcrumbs and flour. For dairy-free, omit Parmesan and use dairy-free ranch. Don’t overcrowd the air fryer for best crispiness. Let chicken rest before serving for juicier bites. Can be baked at 425°F for 16-18 minutes if no air fryer is available.
