  • ½ cup (60 grams) all-purpose flour
  • ¼ cup (30 grams) cornstarch
  • 2 large eggs, beaten, room temperature
  • 1 cup (100 grams) panko breadcrumbs (Japanese brand recommended)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • Cooking spray or olive oil spray

Instructions

  1. Peel and slice the onions into ¼-inch (6 mm) thick rings. Separate the rings gently and set aside.
  2. In three separate bowls, place the flour mixed with half the salt and pepper, the beaten eggs, and the panko breadcrumbs mixed with paprika, garlic powder, and the remaining salt and pepper.
  3. Working one ring at a time, dredge in the flour mixture, shaking off excess; dip into the egg, then coat thoroughly with the breadcrumb mixture. Press the crumbs gently so they stick well but don’t clump.
  4. Preheat your air fryer to 400°F (200°C) and let it warm up for about 5 minutes.
  5. Place coated onion rings in a single layer in the air fryer basket without overlapping. Spray lightly with cooking spray. Cook in batches if needed.
  6. Air fry for 8 minutes, then flip the rings, spray again lightly, and cook for another 5-7 minutes until golden and crispy.
  7. Transfer to a wire rack or paper towel-lined plate to drain any excess moisture. Serve immediately.

Notes

For extra crispiness, add 1 tablespoon of cornstarch to the flour mix or increase air fryer time by 1-2 minutes, watching closely to avoid burning. Keep onion rings dry before dredging to prevent sogginess. Flip halfway through cooking for even crispness. For gluten-free, substitute flour and panko with gluten-free alternatives. To reheat leftovers, air fry at 350°F for 3-4 minutes; avoid microwaving.
