  • 1/2 cup buttermilk (or 1/2 cup milk + 1/2 tbsp lemon juice or vinegar, let sit 5 min)
  • 2 tbsp ranch seasoning mix, divided
  • 2 tbsp hot sauce (such as Frank’s RedHot or Nashville hot sauce)
  • 1 cup panko breadcrumbs (sub gluten-free panko if needed)
  • 1/2 cup all-purpose flour (or almond flour for gluten-free option)
  • 2 large eggs, beaten
  • Cooking spray or oil (avocado or olive oil spray recommended)
  • 2 tbsp butter, melted
  • 1 tbsp Nashville hot seasoning (or mix: 2 tsp cayenne, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp brown sugar, 1/2 tsp salt)
  • Salt and pepper, to taste
  • Optional garnishes: fresh parsley, sliced pickles, extra ranch for dipping

Instructions

  1. Cut chicken into 1-inch cubes and pat dry with paper towels.
  2. In a mixing bowl, whisk together buttermilk and 1 tbsp ranch seasoning. Add chicken, toss to coat, and let sit for 5-10 minutes (or up to 30 minutes in the fridge).
  3. Set up three shallow bowls: one with flour plus 1/2 tsp each salt and pepper, one with beaten eggs, and one with panko breadcrumbs plus 1 tbsp ranch seasoning.
  4. Dredge each chicken piece in flour, dip into eggs, then coat in panko mixture, pressing gently to adhere. Place breaded pieces on a plate or baking sheet.
  5. Preheat air fryer to 400°F for 3 minutes and lightly spray the basket with oil.
  6. Arrange chicken bites in a single layer in the basket (work in batches if needed) and spray tops lightly with oil.
  7. Air fry at 400°F for 8-10 minutes, flipping halfway, until golden brown and internal temperature reaches 165°F.
  8. Meanwhile, mix melted butter, hot sauce, and Nashville hot seasoning in a small bowl until smooth.
  9. Transfer hot chicken bites to a mixing bowl, pour Nashville hot ranch butter over, and toss to coat evenly.

Notes

For gluten-free, use almond flour and gluten-free panko. For dairy-free, use plant-based milk and vegan ranch seasoning. Adjust cayenne and hot sauce for desired spice level. Bread all chicken before air frying for efficiency. To keep batches warm, place on a rack in a low oven (200°F). Leftovers reheat best in the air fryer.
