Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 cup all-purpose flour (or gluten-free all-purpose blend)
  • 2 large eggs
  • 1 cup panko breadcrumbs (regular or gluten-free)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or neutral oil (avocado or canola)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 4 cloves garlic, minced
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp cornstarch + 2 tbsp cold water
  • 1 tsp toasted sesame oil (optional)
  • Red pepper flakes, to taste (optional)
  • Sliced green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Pat chicken dry with paper towels and cut into 1-inch cubes.
  2. Set up three bowls: one with flour, one with whisked eggs, and one with panko breadcrumbs mixed with garlic powder, onion powder, salt, and black pepper.
  3. Dredge chicken pieces in flour, dip in egg, then coat in panko mixture. Press gently so coating sticks. Place coated pieces on a plate or baking sheet.
  4. Preheat air fryer to 400°F for 3 minutes.
  5. Arrange chicken in a single layer in the air fryer basket. Spray lightly with oil. Cook for 8-10 minutes, shaking halfway, until golden and cooked through (internal temp: 165°F). Cook in batches if needed.
  6. While chicken cooks, combine honey, soy sauce, minced garlic, rice vinegar, and sesame oil in a small saucepan. Heat on medium until bubbling.
  7. Mix cornstarch with cold water and stir into bubbling sauce. Simmer 1-2 minutes until thick and glossy. Add red pepper flakes if desired.
  8. Transfer cooked chicken to a clean bowl. Pour warm honey garlic sauce over and toss to coat.
  9. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

For extra flavor, marinate chicken in a splash of soy sauce and garlic for 10-15 minutes before breading. Don’t crowd the air fryer basket—cook in batches for maximum crispiness. For gluten-free, use GF flour, panko, and tamari. To reheat, air fry at 350°F for 3-4 minutes. For a vegetarian version, use tofu or cauliflower instead of chicken.
