  • 2 tablespoons (28 g) unsalted butter, cut into pieces
  • 2 tablespoons (25 g) granulated sugar, divided
  • 1/4 teaspoon salt
  • 1 cup (125 g) sifted all-purpose flour
  • 2 large eggs, room temperature
  • 1 teaspoon cinnamon (for coating)
  • Vegetable oil spray (for greasing air fryer basket)

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, 1 tablespoon granulated sugar, and 1/4 teaspoon salt. Bring to a rolling boil over medium-high heat, stirring occasionally. Remove from heat immediately once boiling.
  2. Quickly add 1 cup sifted all-purpose flour to the hot liquid. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
  3. Transfer the dough to a mixing bowl and let it cool for about 5 minutes to avoid scrambling the eggs.
  4. Add eggs one at a time, mixing thoroughly after each addition until the dough is smooth, elastic, thick but pipeable.
  5. Preheat the air fryer to 375°F (190°C) for at least 3 minutes. Line the air fryer basket with parchment paper or lightly spray with vegetable oil.
  6. Fit a piping bag with a large star tip and fill it with the dough. Pipe 4-inch strips directly into the air fryer basket, leaving space between each.
  7. Air fry for 10-12 minutes, turning halfway through cooking until golden brown and crisp outside but tender inside.
  8. While churros cook, mix 1 tablespoon granulated sugar with 1 teaspoon cinnamon in a shallow bowl.
  9. Remove churros from the air fryer and immediately toss in the cinnamon sugar mixture to coat evenly. Serve warm.

Notes

If dough is too stiff to pipe, add an extra egg yolk to loosen it. Avoid overcrowding the air fryer basket for even cooking. Toss churros in cinnamon sugar while still warm for best coating.
