Ingredients

Scale
  • 2 pounds (900 g) chicken wings, split into flats and drumettes, fresh or thawed
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt, plus extra to taste
  • ½ teaspoon freshly ground black pepper
  • Buffalo Sauce: ½ cup (120 ml) hot sauce (Frank’s RedHot), 3 tablespoons unsalted butter, melted
  • Garlic Parmesan Sauce: 2 tablespoons unsalted butter, melted, 2 cloves garlic minced, ½ cup (50 g) grated Parmesan cheese, 1 teaspoon dried parsley
  • Lemon Pepper Sauce: Zest of 1 lemon, 1 tablespoon lemon juice, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 tablespoon olive oil
  • Honey BBQ Sauce: ½ cup (120 ml) barbecue sauce (Sweet Baby Ray’s recommended), 2 tablespoons honey
  • Optional garnishes: chopped green onions, extra Parmesan, lemon wedges

Instructions

  1. Pat the wings dry with paper towels to ensure crispiness. Place wings in a large mixing bowl.
  2. Sprinkle 1 tablespoon baking powder, 1 teaspoon salt, and ½ teaspoon black pepper over wings. Toss well to coat evenly. This takes about 5 minutes.
  3. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  4. Arrange wings in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary for even cooking.
  5. Air fry at 400°F (200°C) for 20-25 minutes, flipping halfway through (about 10-12 minutes). Wings should be golden brown and crispy. Check internal temperature; it should reach 165°F (74°C).
  6. While wings cook, prepare your chosen sauce by combining ingredients in a small saucepan or microwave-safe bowl. Melt butter and stir to blend flavors.
  7. Once wings are cooked, transfer them to a large bowl. Pour sauce over and toss with tongs until evenly coated.
  8. Garnish with optional toppings like chopped green onions or lemon wedges and serve immediately.

Notes

Pat wings dry thoroughly and use baking powder (not baking soda) for extra crispy skin. Do not overcrowd the air fryer basket to ensure even cooking. Let wings rest uncovered in the fridge for 30 minutes after seasoning for even crispier skin. Clean air fryer basket and tray after each use to avoid grease buildup. If wings aren’t crispy enough, increase cooking time by 3-5 minutes. Use a meat thermometer to ensure wings reach 165°F (74°C).
